I actually based this recipe off my crockpot Thai chicken curry! If you haven’t tried it, you must! So delish.

The flavors sounded really good, but I wanted something soupier – perfect for chilly, rainy spring days amiright?! – and a wanted to load up on the veggies.

Basically, I just threw a bunch of Thai inspired ingredients that sounded good into my slow cooker and

BOOM.

Slow cooker Thai chicken soup was born.

So.

Let’s dooooooo this.

  1. Grease crockpot
  2. Whisk together sauce in crockpot: 2 cans lite coconut milk, chicken broth, peanut butter, red curry paste, fish sauce, soy sauce, dark brown sugar, garlic, and ground ginger <– YUUUUUM.
  3. Add in the goodies: chicken breasts, onion, carrots, bell pepper, mushrooms, and broccoli
  4. Cover and cook until your house smells ah-mazing
  5. Cube the chicken, season with salt, and throw in some lime juice
  6. Serve! I LOVE this over brown rice (noodles would be super good, too) and with a sprinkle of cilantro for freshness and peanuts for crunch

Now. A quick note about the veggies. You can TOTALLY use whatever you want, I just happen to really like this combination. Especially the broccoli, because it soaks up all the yummy broth flavor and I swear it’ll convert even the strongest broccoli haters. That being said, I think any veggies would probably work just fine!

A few other notes about this slow cooker Thai chicken soup.

  1. I use an entire jar of red curry paste and I didn’t think it was spicy. That being said I LOVE spicy food, so if you don’t like spice, start with 1/4 cup curry paste, you can always add more after cooking, but you can’t take it out. 😉
  2. I added red pepper flakes for more spice, but that’s totally optional. Again, add after cooking, if you want to add more spice.
  3. Season with salt AFTER you taste the finished soup. I needed a ton of salt, but you might not depending on what kind of chicken broth, peanut butter, and soy sauce you use.

FAQs

Does soup taste better in slow cooker? ›

You'll be rewarded with richer, more intense flavors in your soup. There is very little evaporation in the slow cooker. If you're adapting a regular soup recipe, it's likely that you won't need to use all the liquid called for. Put all your ingredients in the slow cooker and then pour the broth over top.

How to make chicken soup without drying out the chicken? ›

Cold-poaching the chicken breasts, then removing them until the end of the cooking process, guarantees a perfectly tender and juicy texture. Using stock reinforces the flavor of the broth, creating a more deeply flavorful soup.

Can I cook soup in slow cooker overnight? ›

Stick to the cook time indicated on your recipe

Most slow cooker meals take 8-12 hours on low or 4-6 hours on high, but there are also recipes for slow-cooked meat that take up to 24 hours. If you want to avoid overcooking your dish, follow the given guidelines as closely as possible.

Can you simmer chicken soup all night? ›

After simmering for about 2 hours, add the salt. Cover with a tight-fitting lid and cook for a total of 12 hours (either a whole waking day or overnight). Skim off the fat from the top occasionally, reserving that fat and broth with it in a bowl in the fridge.

How long can you leave soup in crockpot on low? ›

That varies by what's inside the slow cooker and also by the appliance's setting and model, the experts say. Most recipes for all-day cooking call for 6 to 8 hours on low. Quality- (and safety-) wise, another 1 to 2 hours in 'keep warm' mode won't mess things up.

Can you overcook soup in a slow cooker? ›

"When a slow cooker is too full, it may not heat the food evenly," explains Leal. As a result, some parts of the dish may overcook, while others remain undercooked. "This can also increase the risk of foodborne illness, because the food might not reach a safe temperature throughout," she says.

How to add extra flavor to chicken soup? ›

A splash of vinegar or wine can add depth and complexity to the flavors of your chicken noodle soup. Try adding a small amount of apple cider vinegar or a dry white wine for a delightful tangy note. Just remember to add it gradually, tasting as you go, to avoid overpowering the soup.

Does chicken soup get better the longer you cook it? ›

While broth and stock both get richer and richer the longer you cook them, the problem is that the chicken meat will dry out and get tough if you let it go too long. Vegetables will also have an unpleasant texture if you overcook them, turning mushy and falling apart.

Can I use chicken broth instead of water for chicken soup? ›

When should you go through the trouble of using stock instead of water? Only in cases where the flavor of the stock is really essential—it wouldn't be chicken soup without good chicken stock—or when not many other aromatics are worked into the recipe, as for risotto or French onion soup.

Is 4 hours on high the same as 8 hours on low? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

Is it okay to leave the slow cooker on low overnight? ›

Yes, you can use your slow cooker for longer than eight hours, as long as you keep an eye on it. Many slow cookers do have an automatic shutoff after 24 hours.

Can I sleep with slow cooker on? ›

The bottom line, or bottom of the pot, is that leaving slow cookers unattended does carry some risk.

Can I eat soup that has been in the fridge for a week? ›

For best safety and quality, plan to eat refrigerated soup within 3 to 4 days or freeze it. And avoid letting soup set at room temperature for more than TWO hours. Don't put a large pot of hot soup directly into your refrigerator.

Can you eat chicken soup that has been left out overnight? ›

Toss it. That is several hours in the temperature ''danger zone'' where bacteria grow the best (see the USDA guidelines here http://www.fsis.usda.gov/factsheets/how_temperatures_affect_food/index.asp.

Can I eat chicken soup after 5 days? ›

A general rule of thumb is that soup can be stored in the refrigerator for about three days, but you should always taste your dish before deciding to reheat. A clear, vegetable-based soup with some acidity, such as tomatoes, may last longer. Chicken soup usually lasts three to five days.

Is it better to pressure cook or slow cook soup? ›

Slow cookers and pressure cookers come in a variety of sizes up to eight quarts, but pressure cookers need extra room inside the pot for the steam to accumulate, which limits the batch size. If you have a large family or plan on making soups and stews you can store for later, you may be better served by a slow cooker.

Does soup taste better the longer you cook it? ›

The longer the stock cooks, the more flavorful your soup will be.

Does food taste better in a slow cooker? ›

The longer cooking time and the low heat complement each other perfectly. As a result, even though the meat is cooked for far longer, it doesn't dry out because the temperature is low. As a result, this is the best way to retain all the natural juices of the meat. It also makes the meat far more flavorful.
