These air fryer scotch eggs are healthy and easy to make. They use a simple homemade sausage with ground turkey and instead of deep frying them with oil, they are air fried to save on calories.
This weekend, I went to the Boiler Room and it inspired me to make my own scotch eggs. It's this fun little sit-down restaurant in downtown Fargo that serves the best Scotch eggs with this spicy dipping sauce.
I think I ended up getting pretty damn close their sauce also. It has maple and a few chipotle peppers for spice. The sauce pretty much makes the Scotch Eggs. I'd use it for dipping chicken fingers or french fries. I went there with my new friend and we had a few Moscow Mules.
The air fryer is one of my favorite kitchen appliances. Check out some of these recipes! Air Fryer Chimichangas, Air Fryer Pizza Bombs, Air Fryer Fish and Chips, Air Fryer Lamb Chops with Garlic and Rosemary, and Air Fryer Toasted Ravioli.

Weight Watchers Scotch Eggs
This recipe was posted back in 2016 and I recently edited this recipe to death to make it more WW friendly and also adapted it for the Air Fryer. There is also a recipe for 0 point turkey sausage below using 98% ground turkey! Pretty stoaked about this recipe and now I want some scotch eggs. Using storebought sausage is also fine.
Homemade Turkey Sausage
I love any kind of sausage period, but it is crazy how much salt there is in those packaged sausages and how many points it can be! Making your own turkey sausage at home is pretty simple and cuts out a lot of salt! One normal scotch egg is 560 mg of sodium this recipe is half the sodium.
What Ingredients do I need?
98% fat-free turkey breast, ground - or any type of sausage that you prefer such as Italian, Hot, or Mild (points will be different
Marjoram - Is a herb that is commonly used for culinary purposes. It has a slightly sweet and citrusy flavor and is often used in Mediterranean, Middle Eastern, and North African cuisines.
Red pepper flakes are small pieces of dried hot peppers, typically made from cayenne, that are crushed or ground into small flakes.
Salt and Black pepper to taste
Hard boiled eggs - I like to precook these in the air fryer as well. See my recipe for Air Fryer Hard Boiled Eggs.
Panko bread crumbs are a type of breadcrumb commonly used in Japanese cuisine. Panko bread crumbs can be found in most grocery stores and are often used as a substitute for traditional breadcrumbs in recipes.
Mayonnaise - can sub plain Greek Yogurt
Maple syrup - can sub sugar-free Syrup
Chipotle pepper in adobo sauce
See the recipe card below for a full list of ingredients and measurements.
How to make Air Fryer Scotch Eggs
Combine mayonnaise, maple syrup, and adobo sauce in a small bowl. Refrigerate until ready to use.
Mix sage, marjoram, red pepper flakes, salt, and black pepper in a small bowl. Place ground turkey in a large bowl and mix the spice mixture into the turkey using your hands.
Divide turkey sausage into 6 even portions. Flatten each portion into a thin patty. Place one hard-boiled egg in the middle and wrap the sausage around the eggs, sealing all sides. Set eggs aside on a plate.
Preheat air fryer to 390 degrees F (200 degrees C).
Place beaten eggs into another small bowl. Place panko bread crumbs onto a plate. Dip each sausage-wrapped egg into beaten egg, letting the excess drip off. Roll in bread crumbs and place onto a plate.
Spray basket of the air fryer with cooking spray and place eggs into the basket. Do not overcrowd; cook in batches if necessary. Cook for 12 minutes, turning eggs over halfway through. Repeat with remaining eggs. Serve with dipping sauce.
Tips for using Air Fryers
The air fryer is so great for cooking simple basic food like air fryer steak, air fryer hard-boiled eggs, and air fryer bacon. Cook up some air fryer chicken breasts for the week and use it chicken quesadillas.
Overcrowding:Do not overcrowd the basket. Place items in a single layer in the air fryer basket or some food will not cook properly or all the way through.
Use a spray oil such as Pam to get food extra crispy and to save on calories.
Use parchment paper on the bottom of your air fryer for easy clean up.
